The perfect healthy snack to bring to work!
Our resident health expert, Mia Uren, shares with us one of her favorite protein-packed snacks to help keep your energy up through a long day at work!
1 cup pumpkin puree
2tbsp coconut oil, melted
2 tbsp maple syrup or your choice of sweetener
1 tsp natural vanilla essence
1 1/2 cups almond flour
2 tbsp coconut flour
3/4 cup walnuts
1 tbspn cinnamon
Preheat the oven to 220°C.
Mix pumpkin, eggs, coconut oil, maple syrup and vanilla in a bowl until well combined. Add in the rest of the ingredients and stir until it is all mixed through and no lumps appear.
Pour the mixture into a greased or lined baking tin. Pop in the oven for 25 minutes or until the top starts to go golden and a fork comes out clean. Once removed from the oven leave to cool for about half an hour then eat straight away or store in the fridge.
